Guacamole has to be one of my most favourite things to eat. It’s fresh and zingy, spicy and creamy, and is super versatile….
My husband doesn’t get home until late most evenings, so at weekends we make an extra effort to sit and have family meals together. Having 2 teenagers, time together as a family is getting harder and harder to maintain, and so at family meals times I make a real effort to make it a feast. Today’s dinner was a parmesan and sun blushed tomato roasted chicken with roasted potatoes, salad and this amazing guacamole.
This is such a simple recipe, and takes literally minutes to put together. All of the ingredients are pretty standard for guacamole, with the exception of one addition, that adds an amazing sweet, spiciness. Pickled Jalapeno chillies! You can buy these in most supermarkets, usually in the World foods aisle, with the Mexican ingredients. They come in red, yellow and green, but I always use the red, as I prefer the sweeter flavor.
As with all of my recipes, feel free to adjust the ingredients of this guacamole to suit your taste. If you prefer more zing, add more lime juice. Similarly, if you like it nice and spicy, be generous with the chillies….I definitely double up here!
Serve your guacamole with any number of dishes. Mexican dishes, like chilli con carne and fajitas are obvious choices, but try it with roast chicken, steak or grilled fish too. I’ll be using leftovers tomorrow for my lunch, with toasted rye bread and poached eggs, seriously delicious! Enjoy x
Fresh & Spicy Guacamole
Ingredients
- 1 ½ – 2 Avocadoes (dependent on size)
- ½ Red Onion, finely chopped
- I Tomato, deseeded and chopped into small pieces
- 1 Lime, juice of
- Fresh Coriander, a handful roughly chopped
- Picked Jalapeno Chillies, drained & finely chopped (optional)
Method
Place flesh from avocadoes into a bowl, and roughly mash with a fork.
Add onion, tomato, juice of the lime, coriander and chillies, if using.
Season, with salt and freshly ground black pepper, and stir gently to combine. Don’t be too heavy handed here, as your avocado with become too mushy.
Serve, and enjoy!
