If you are familiar with green smoothies, you will love this recipe…

if you are new to green smoothies, be brave, and give it a go! Remember green is good, and this smoothie is packed full of vibrant goodness. Your body will thank you for it for sure, and I can reliably inform you that it is a great hangover cure! I’m not sure if it’s the super hydrating coconut water, or the combined nutritional powerhouse of all the veggies, but it really works…. as I have experienced on the odd occasion….

I went through a phase, when green smoothies became almost trendy, of trying as many as I could fit into a week. Even convincing my reluctant husband to try a few with me. Honestly, his gag reflex kicked in before his quivering, cynical lips even touched the smoothie glass, but this smoothie he liked. That, my friends, says a lot.

As well as containing lovely green goodness, in the form of avocado, spinach and cucumber, the smoothie also contains a sweet touch of mango. As a rule, I don’t drink ‘fruit only’ smoothies, due to the high (natural) sugar content. The ratio of mango to green goodness in this recipe is small, so all good. But it does add a, much needed, hint of sweetness, that cuts through the bitterness that can occur with leafy greens, such as spinach.

All measurements in this smoothie recipe are approximate. You really can adapt recipe to suit your taste i.e. Add more mango for a sweeter, fruitier tasting drink. Add more cucumber for extra lovely freshness. Adjust quantity of coconut water according to how thick you like your smoothies. I like mine a little runnier, making it easier to drink. Finally, I like to add a half teaspoon serve of Matcha powder, for a full on hit of antioxidants – this is entirely optional, you can leave this out, or replace with your preferred supplement.

Green Smoothie (serves 1)

Ingredients

  • 25-30g Spinach
  • 125g Mango, roughly chopped
  • 2” length Cucumber, roughly chopped
  • ¼ large Avocado
  • 1 tsp. Chia Seeds
  • 300ml Coconut Water
  • ½ tsp. Matcha Powder (optional)

Method

Add all ingredients to a blender, and blitz until smooth. Simple!
