If you are looking to mix things up at breakfast time, give this creamy coconut chia pudding a try. Top with tropical fruits and dream of faraway places….

I have always been a bit hesitant to try chia pudding, as honestly, it just looks a bit weird! As an active Instagram user, I see pictures every day of this unusual speckled pudding elaborately decorated and decided it was time to give it a try. I am so glad I did, it is amazing! Despite being called a ‘pudding’ I see this as a breakfast dish, healthy snack or dessert.

Chia seeds are a staple in my daily diet and I like to add them to everything from smoothies to porridge, as well as a quick sprinkle on salads. They are a fantastic addition to a healthy diet and contain an amazing amount of goodness including being packed with omega 3 fatty acids, and are full of fibre. As well as that they are a great source of protein, so a brilliant little seed to have on hand.

I used coconut milk to make my pudding, as it has such a wonderful flavour and I anticipated the chia needing a little help in that department. Despite their abundance of goodness, flavour is not their strong point. However, if you use coconut milk to soak the seeds and add a little vanilla as I do here, it will transform them.

To make the chia pudding you will need a little time, as while taking seconds to put together, it needs setting time. I recommend you leave the pudding overnight to set, and you then have a breakfast ready to eat first thing in the morning. However, it will set within a couple of hours if you don’t want to leave it that long.

Toppings..

I made a quick mango puree to decorate my chia pudding and then topped with extra fruit. This is where you can get creative and use whatever you have to hand to decorate with. Yoghurt would also be a good topping to add, as would nuts and seeds.

Have fun with this; it really is worth the little effort that it takes. Like me, I’m sure you will be pleasantly surprised with how this magic little chia pudding tastes.

Coconut Chia Pudding

 Ingredients

  • ½ Cup Coconut Milk
  • 2 tbsp. Chia Seeds
  • ½ tsp. Vanilla Extract

Method

Firstly, measure out the coconut milk into a jug and then add the chia seeds and vanilla extract.

Give a good stir together.

Pour into a serving bowl, and then place in the fridge overnight.

Finally, once set, add fruit, fruit purees and yoghurt as desired.
