Creamy coconut milk, sweet strawberries and frozen bananas combined with oats to make this amazingly nutritious breakfast, ready to eat as soon as you wake up in the morning…

This is a variation, or dare I say improvement, on the previous overnight oats recipe on my blog. These oats have a natural sweetness thanks to the strawberries and banana. Also, using coconut milk to soak the oats gives them a beautiful aromatic, tropical flavour. In my opinion, a perfect summertime breakfast, especially if you are looking for some pre workout fuel.

We are in the middle of a sticky heat wave at the moment, so knowing I have breakfast ready to go in the morning is a godsend. The fact that these oats are nice and cold is ultimately an added bonus. I don’t like to moan about the heat when we Brits spend so long waiting for it, but these uncomfortable nights with little sleep are torture right now!

Oats are perhaps one of the most nutritional breakfasts, and I do miss porridge over the warmer months. However, who really wants hot porridge on a beautiful hot and sunny morning?! Therefore, this is a great alternative, when I get bored of the homemade granola that is! Greek yoghurt helps with the soaking process, and adds a great protein hit to the dish. Magical chia seeds also add protein, so along with the fresh fruit; these oats make a well-balanced breakfast option.

I like to decorate my finished bowl with extra strawberries, almonds and some coconut flakes, in order to add a little crunch. However, feel free to add your favourite toppings, any fresh berries and nuts would be an amazing addition.

Coconut & Strawberry Overnight Oats

 Ingredients

  • ½ Banana, sliced and frozen
  • 50g Strawberries, halved
  • 65g Greek Yoghurt
  • 35g Jumbo Oats
  • 1 tsp. Chia Seeds
  • 75ml Coconut Milk

Method

Firstly, to a blender, add the frozen banana slices, strawberries and greek yoghurt. Pulse until broken down and it forms a smooth, creamy texture.

Next, transfer this mixture to a large bowl and then add the oats and chia seeds. Use a large spoon to give the mixture a good stir, and ensure all ingredients are well combined.

Add the coconut milk, and give everything another good mix together

Pour oat mixture into a serving bowl, cover with cling film and place in the fridge overnight.

Finally, in the morning, remove cling film, stir and decorate with strawberries, almonds and coconut flakes. Then devour!
