I’m sharing with you an easy to prepare granola recipe, that is full of ‘good for you’ ingredients, filling and totally delicious. I am a real morning person (I know, I know… we can be totally annoying first thing in the morning, bouncing around like a Duracel bunny!), so am always ready for a ‘proper’ breakfast. I wouldn’t dream of missing it, and if I did, I would be utterly miserable.
My teenager daughter loves this granola, which is great, as I know she is heading off to school with a decent start to the day. Not being such an enthusiast of mornings as I am, making sure she has time for a healthy breakfast can be a struggle. Preparing ahead, and having individual portions ready to go, make it a quick and easy option for her. We like to serve with Greek yoghurt and a handful of fresh berries – so definitely, a nutritionally sound breakfast.
I have given measurements for an 8 portion batch, which is perfect for making on a weekend, and the whole family enjoying in the week ahead. Recipe can easily be halved, should you want to make less.

Crunchy Nutty Granola (makes 8 portions)
Ingredients
- 200g Jumbo Rolled Oats (not instant)
- 160g Mixed raw nuts (I like to use 80g Cashews & 80g Pecans)
- 30g Mixed Seeds (I like to use a mix of Sunflower & Pumpkin seeds)
- 2tbsp Olive Oil
- 2tbsp Honey
- 90g Dried Dates, chopped
Method
Preheat oven to 180°C,160°C Fan, 350°F
Add all ingredients, except dates to a large bowl.
In a separate bowl (cereal size will do), add chopped dates and enough water to just cover. Microwave on full power for 1 minute. Mash cooked mixture together with a fork, until it forms a paste like texture. (be patient with this, but if there is excess water that just wont combine, simply pour off) Add this date mix to other ingredients, and stir to combine thoroughly.
Spread mixture evenly onto a large baking sheet.
Pop into oven for approx. 25 – 30 minutes. It is ready when lovely and golden brown. Keep any eye on this though as you don’t want it too toasted!
Using a spatula, loosen granola from bottom of tray, and leave to cool.
Once cool, your Granola is ready to go! You can either, store in an airtight container in one big batch, or separate into individual portions. I prefer to do this, and use food bags with ties to keep fresh. For 8 portions, each will weigh out at approx. 65-70g each.
Serving Suggestion
Serve with Greek yogurt and fresh berries, as I do, or however you please. Enjoy!
