If you are looking for a healthy and delicious salad dressing  then try this fabulous creamy avocado dressing, with fragrant coriander and a zesty lime kick….

The inspiration to make this versatile dressing came after eating the most delicious homemade guacamole at the weekend. The flavours are very similar, but the texture is creamy smooth and it’s perfect for drizzling. I’m not a huge fan of store bought salad dressing, as I think they mostly have an unpalatable artificial flavour. The beauty of making your own dressing is that you know exactly what is going in, and you can vary the ingredients according to your taste.  They also take literally minutes to make, so it’s a win/win situation!

Avocado is such an amazing food, and I’m very aware that I probably eat far more than necessary. Although high in fat, it’s the good kind and your skin will reap all sorts of wonderful benefits from it. Using avocado in a dressing gives it a wonderful creamy texture, and in this recipe I use a little yoghurt and water to help give a drizzling consistency. If you prefer a runnier dressing you can simply add more water. Although remember that it’s easier to add more than to take away!

Garlic…

It’s worth pointing out that there is uncooked garlic in this recipe, and it’s rawness does add a bit of bite to the flavour. If you are not keen on garlic, the dressing tastes wonderful without it, so feel free to omit from the recipe. There are so many other wonderful flavours such as the spring onion, coriander and lime that it really won’t be missed.

Don’t limit this dressing just to salads, I also like to use on eggs and it’s perfect for perking up plain rice or potatoes. It would be a great side to add to a barbecue spread, you could use it to liven up plain grilled meats and fish, ultimately a great all rounder!

Avocado and Lime Dressing

 Ingredients

  • 2 Avocadoes, peel & remove stone
  • 1 Spring Onion, chopped
  • 1 Garlic Clove (optional)
  • Fresh Coriander, small handful
  • Juice of 1 Lime
  • 200g Natural Yoghurt
  • 3 Tbsp. Olive Oil
  • 150ml Water

Method

 

Firstly, to a blender, add the avocadoes, spring onion, garlic (if using), coriander, lime juice, yoghurt and olive oil.

Blend until all ingredients are combined, and then add the water (with motor running) until you reach your desired consistency.

Finally season with salt and freshly ground black pepper and transfer your dressing to a serving bowl or bottle.
